Last week I posted a pic of the cookies hubby and I were making. I thought I’d share the recipe so everyone can enjoy the cookies.
The cookies themselves are pretty simple and great on their own with a glass of milk or cup of tea. Use your imagination to find different ways to dress them up.
6 1/2 cups of all purpose flour
2 cups of white sugar
6 large eggs or 7 small eggs
1 teaspoon of salt
2 tablespoons of baking powder
125 grams of butter at room temperature
Mix the butter and sugar in a large bowl until it is completely blended. I use a stand mixer with the paddle attachment. Add the eggs (I crack the eggs one at a time into a cup then add them to the bowl in case there is a bad egg) and mix well. In a separate bowl, mix all the dry ingredients then add to the wet mixture and mix well. Move the dough to a floured surface and knead well. Cut the dough into whatever shape you’d like. You can use cookie cutters but I just use a glass. Bake on a cookie sheet at 350 Fahrenheit for about 10 minutes or until golden. Remove from cookie sheet and let cool.
While the cookies are cooling, melt some chocolate. Use whatever chocolate you like – dark, milk or white. Dip the cookies face down into the melted chocolate. You could stop here or you could now dip the chocolate part into nuts, candy, coconut – whatever you’d like. We toasted some slivered almonds in a non stick frying pan over low heat for a few minutes. Let the cookies sit for a few minutes to allow the chocolate to cool. Then…enjoy!
